WHere is a simplified take on a beverage featured on the seasonal drinks list. Designed as a party-sized premix that is packed with tastes of a Christmas time, making it excellent for hosting a holiday party. Reserve the remaining cordial for brunch beverages, puddings, or to make another batch of bikinis.
Bikini Recipe
Yields 10 servings
Ingredients for the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Cocktail (produces 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
For the Cordial: Place all the items inside a pan, bring to a simmer, stirring to dissolve. After that, remove from the stove and leave to reach room temperature entirely. Transfer to a sterilised bottle, cap it and refrigerate it in the refrigerator, where it will keep for up to one month.
To make Batch Mix: Pour the specified liquids into one big jug, let it rest for an hour, then filter it best through cheesecloth, making it fully clarified.
To serve: Measure 85ml of your batch mix to a mixing glass containing ice, gently stirring gently for one minute until cold. Filter into a cold coupe glass or similar, decorate with some cranberries and finish with a light spray with the mandarin essence over the top.
